The laid-back Gilpin Spice has an open kitchen serving pan-Asian dishes inspired by countries along the spice trail – spanning the Philippines, the Indian sub-continent, Malaysia, Thailand, Indonesia, Japan and China.
Welsh chef Tom ‘Westy’ Westerland heads up the kitchen at Gilpin Spice, where guests can dine in a truly extraordinary location with an open-plan kitchen that adds to the dining experience. Westy trained at Michelin Star Restaurant Hywel Jones and Lucknam Park and there continued to build his passion.
Westy is adding his own style to Gilpin Spice. “My food is very fun, there’s always a bit of a story behind it. His focus is on storytelling and communicating that to the guests so that they know the background of the dish and what the inspiration was behind it.”
